Simple No-Sugar Smash Cake Recipe

Make a healthier (and cheaper) no-sugar smash cake at home!

Equipment

  • 3 4" mini springform pans

Ingredients

  • 1 1/2 cups almond flour fine blanched
  • 1/2 cup banana ripe, mashed
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt

Instructions

  • Preheat oven to 350 degrees.
  • Combine dry ingredients - flour, baking powder, and salt in one bowl and mix well.
  • Combine mashed banana, eggs, and vanilla in another bowl and mix well.
  • Mix the dry and wet ingredients together.
  • Pour batter into pans and bake for 20 minutes.
  • Let cakes cool completely before icing. You can choose to ice your cakes with store bought icing, yogurt, or make your own.
  • Top the cake with fresh fruit or sprinkles
