Why We Love Homemade

Unlike many store-bought sherbets made with artificial flavors, synthetic dyes, preservatives, and stabilizers, this recipe starts with fresh oranges, raspberries, and lime. Those fruits naturally provide vitamin C, antioxidants, and other beneficial plant compounds. You won’t find those in most conventional frozen desserts.

Because you’re making it yourself, you also get to choose the ingredients. Use fresh fruit, organic dairy or full-fat coconut milk, and sweeten it just enough for your family’s taste. It’s still a dessert, but one made from simple, recognizable ingredients that let real fruit shine.

At Green Child, we don’t believe healthy eating means never having dessert. It means choosing whole, nourishing ingredients most of the time and enjoying treats made with care whenever you can.

More reasons you’ll love this recipe:

  • No ice cream maker required
  • Made with real fruit juice and berries
  • Naturally colorful without artificial flavors
  • Easy to make dairy-free with coconut milk
  • Fun to swirl or layer for a beautiful rainbow effect
  • Refreshing, lighter than traditional ice cream

Homemade Rainbow Sherbet Ingredients

For equipment, all you need is a loaf pan (we use glass) or freezer safe container and a fork or spoon for stirring.

rainbow sherbet ingredients

This no-churn rainbow sherbet recipe comes together with fresh fruit, milk (or coconut milk), sugar, and just a pinch of salt. There are no fancy ingredients or special equipment required. A few notes on the ingredients:

Freshly squeezed orange and lime juice give this sherbet its bright, vibrant flavor. Whole milk creates a creamy texture while keeping the sherbet lighter than traditional ice cream. For a dairy-free version, full-fat coconut milk or full-fat cashew milk works beautifully.

Since fruit varies in sweetness, taste each mixture before freezing and add a little more sugar if needed. Just a pinch of salt helps balance the fruit and enhances the overall flavor.

Orange Layer

  • 1 cup fresh orange juice
  • ½ cup whole milk or full-fat coconut milk
  • 2–3 tablespoons sugar
  • Pinch of sea salt

Raspberry Layer

  • 1 cup fresh or thawed raspberries
  • ½ cup whole milk or full-fat coconut milk
  • 2–3 tablespoons sugar
  • Pinch of sea salt

Lime Layer

  • 1 cup fresh lime juice (or mostly lime with a splash of lemon)
  • ½ cup whole milk or full-fat coconut milk
  • 2–3 tablespoons sugar
  • Pinch of sea salt

Optional: ½ teaspoon vanilla extract in any layer

How to Make Rainbow Sherbet

Every time we make homemade sherbet or ice cream, we’re surprised by how easy it is. The hardest part is waiting for it to freeze.

Step 1: Prepare the Fruit Bases

Whisk together the orange juice, milk, sugar, and a pinch of salt until the sugar dissolves.

Blend or mash the raspberries with the milk, sugar, and salt. Strain through a fine mesh sieve if you prefer a smoother sherbet without seeds.

Whisk together the lime juice, milk, sugar, and salt.

Place each mixture in the refrigerator until thoroughly chilled.

Step 2: Build the Layers

Pour the orange mixture into a loaf pan.

Freeze for about 20–30 minutes, until just firm enough to support the next layer.

Repeat with the raspberry mixture, then the lime mixture, freezing briefly between each addition.

For a marbled rainbow look instead, spoon all three mixtures into the pan and gently swirl them together with a butter knife.

Step 3: Freeze

Cover the pan tightly and freeze for 3–4 hours.

For an even creamier texture, stir the mixture every 60–90 minutes during the first few hours to help reduce ice crystals.

Step 4: Scoop & Serve

Let the sherbet sit at room temperature for 5–10 minutes before scooping.

Serve in organic waffle cones, bowls, or alongside fresh berries for an extra colorful dessert.

Tips for Success

  • Chill each fruit mixture before layering for cleaner layers.
  • Use ripe, flavorful fruit for the brightest taste.
  • Taste each fruit mixture before freezing and adjust the sweetness if needed (the beauty of homemade!)
  • Don’t skip the resting time before scooping.
  • Freeze overnight if making ahead.
  • Swirl instead of layering if you’re short on time.

Storage

Store tightly covered in the freezer for about 2 weeks. If the sherbet becomes very firm, allow it to soften at room temperature for 5–10 minutes before serving.

Variations

Dairy-Free Rainbow Sherbet
Use full-fat coconut milk or rich cashew milk.

Extra Fruity
Fold small raspberry pieces into the raspberry layer before freezing.

Naturally Colored
The fruit already creates beautiful pastel colors, but you can add a tiny drop of natural food coloring if you want brighter rainbow layers.

Mini Sherbet Pops
Pour into popsicle molds instead of a loaf pan for homemade rainbow pops.

Frequently Asked Questions

Can I make this without dairy?

Yes! Full-fat coconut milk produces the creamiest dairy-free version.

Can I use bottled juice?

Fresh juice will give you the brightest flavor, but bottled orange and lime juice can work in a pinch.

Why is my sherbet icy?

Homemade sherbet contains fewer stabilizers than store-bought versions, so some ice crystals are normal. Stirring once or twice during freezing and using full-fat milk or coconut milk helps keep it creamy.

Can I use different fruits?

Absolutely. Mango, strawberry, peach, pineapple, and blackberry all make delicious sherbet flavors.

What’s the difference between sherbet, sorbet, and ice cream?

Sherbet contains fruit along with a small amount of milk or cream, giving it a light, creamy texture without being as rich as ice cream. Sorbet is dairy-free and made primarily with fruit, water, and sugar. It’s typically lighter and icier than sherbet.
Ice cream contains much more dairy, usually heavy cream and/or egg yolks, making it the richest and creamiest of the three. This homemade rainbow sherbet lands right in the middle: bright and fruity like sorbet, but with just enough milk to create a smooth, creamy scoop.
